Vegan Gluten Free Pesto Twist

Our first savoury gluten-free vegan pastry.

Four years of vegan croissant craft, twisted around our homemade fresh basil pesto.

Eighty-four layers of vegan laminated dough wrap and fold around a pesto we make ourselves — toasted pine nuts, fresh basil, cold-pressed olive oil, lemon, a single clove of garlic, sea salt. No parmesan. None needed.

The pesto sits inside the lamination and on top of it. As the dough lifts in the oven, the pesto bakes into the layers — herbal, savoury, layered the whole way through. Something between a croissant and focaccia.

Your safety is our number one priority. Therefore, we adhere to the highest standards and regularly lab test how many parts gluten per million our pastry contains. Our latest results are below 5ppm, which is outstanding.

For reference, food has to be below 20 ppm to be labeled gluten-free and safe for celiacs.
