Beetroot, Carrot and Edamame Bean Salad. So easy to make and will take you less than 10 min prep time. The texture of this salad is soft, juicy and moist and the flavours are perfectly complimentary. The recipe brings out the natural flavour of these yummy ingredients.
You’ll need:
- Cooked Beetroot 250 g
- Steamed Carrots 100 g
- Spring Onion 25 g
- Edamame (peeled & split) 50 g
- Parsley 20 g
- Salt Pinch
- Pepper Pinch
- Olive Oil 30g
Method
- Steam Carrots and let cool down
- -Cut carrots and beetroot in chunks
- -Finely Chop Parsley and Spring Onion
- -Peel edamame bean skin and split in two
- -All ingredients should have similar textures- soft and juicy
- -Add salt, pepper, and olive oil to taste
Makes 4 generous servings
